<p>Dieser Kuchen ist ausgesprochen fluffig, nicht zu süß und überhaupt rundum empfehlenswert. Das Rezept, gefunden auf der<a href="http://www.essen-und-trinken.de/rezept/6720/himbeerkuchen.html"> Essen und Trinken </a>Webseite, ist eigentlich für eine 28 cm Kastenform vorgesehen. Da meine jedoch gern mal zum Anbrennen neigt entschied ich mich für die Marmorkuchenform &#8211; dadurch wurde der Kuchen recht flach. Aber geschmacklich wirklich ausgezeichnet. Mit der Teigmenge  kann man sicher auch ein 12er Muffinblech gut befüllen.</p>

<strong>Zutaten</strong>:</p>
<ul class="ingredients">
<li>150 g Butter (sehr weich)</li>
<li>120 g Zucker</li>
<li>2 Pk. Vanillezucker</li>
<li>3 Eier (Kl. M)</li>
<li>120 g Magermilchjoghurt</li>
<li>220 g Mehl</li>
<li>1 Pk. Vanille-Puddingpulver</li>
<li>3 Tl Backpulver</li>
<li>200 g Himbeeren</li>
<li>2 EL gehobelte Mandeln</li>
<li>Puderzucker zum Bestäuben</li>

<p>Butter, Zucker und Vanillezucker mit den Quirlen des Handrührers sehr schaumig rühren. Eier nacheinander zugeben, dabei jedes Ei mindestens 2 Min. verrühren. Weiterrühren, bis sich der Zucker gelöst hat. Joghurt unterrühren. Mehl, Puddingpulver und Backpulver mischen, kurz unterrühren.</p>
<p>Gefettete Kuchenform mit den gehobelten Mandeln ausstreuen. Die Hälfte des Teiges in die Form füllen, Himbeeren darauf verteilen. Restlichen Teig darauf geben.</p>
<p>Den Himbeerkuchen im vorgeheizten Backofen bei 175 Grad (Gas 2, Umluft 160 Grad) auf der 2. Schiene von unten ca. 40 Min. backen (in der Kastenform: 55 Minuten). Anschließend 5 Min. in der Form ruhen lassen. Vorsichtig auf ein Kuchengitter stürzen und abkühlen lassen. Mit Puderzucker bestäuben. </p>

<p>these cheesecakes are a favourite ever since i first made them. very easy (and quick!) &#8211; whenever i don&#8217;t know what to bring to a party i just <a href="http://chocolateriver.de/raspberry-swirl-cheesecakes/">bring them along</a>. the recipe is adapted from the <a href="http://www.taste.com.au/recipes/4160/raspberry+swirl+cheesecakes">raspberry swirl cheesecakes</a> at <a href="http://taste.com.au">taste.com.au</a>. (but i finally stopped calling them <em>swirl</em> cheesecakes since i never do the swirl part.)</p>
<blockquote class="ingredients"><p><strong>ingredients:</strong></p>
<ul class="ingredients">
<li>10 finely ground oreo biscuits (including filling. any other biscuit  will do as well, but it really tastes best with oreos)</li>
<li>20g butter, melted</li>
<li>50 g frozen raspberries, thawed</li>
<li>1 tsp icing sugar</li>
<li>375 g cream cheese</li>
<li>145 g sugar</li>
<li>3 eggs</li>
<li>optional: lime zest, lime juice</li>

<p>preheat oven to 160°C. line a muffin pan with paper cases. mix ground oreos and butter, divide mixture among paper cases and press down well. bake for 5 minutes, then remove and cool.</p>
<p>mash the raspberries and strain through a sieve. discard seeds and stir in the icing sugar.</p>
<p>beat cream cheese until light and fluffy, then add sugar slowly, beating until combined. add eggs, one at a time, beating well after each addition. (optionally add lime zest and lime juice &#8211; in this case adjust sugar to taste). pour cheese mixture over the biscuit bases, then place drops of the fruit puree on top of the cakes.</p>
<p>bake for 10-15 minutes until set. open oven door and allow cakes to cool completely in switched-off oven.</p>
<p>ps: i&#8217;m submitting these cheesecakes to the next round of <a href="http://www.mankannsessen.de/content/blog-event-cucina-rapida-schnelle-k%C3%BCche-f%C3%BCr-genie%C3%9Fer">cucina rapida</a>.</p>
<p>pps: for the blueberry version, just use frozen blueberries instead of raspberry puree.</p>

<p>i was not able to make it to the party today, but prepared something to bring along: once again the <a href="http://www.taste.com.au/recipes/4160/raspberry+swirl+cheesecakes">raspberry swirl cheesecakes</a>. i used only 150g sugar (which is way enough) and only 340g cream cheese (thanks to ph.ila.delphia for shrinking their package size!). oh, and the base is not made from oreos but <a href="http://www.wikana.de/shop/show_product.php?products_id=72">othellos</a>.  i didn&#8217;t bother with the swirl part, and actually you might call this version also <em>reminds-me-of-disgusting-skin-disease-</em>cheesecakes. nevertheless they are great, and every time i make them somebody asks for the recipe.</p>
